- Background: Manuka honey comes from the tea tree in New Zealand. Medicinal claims are made about this honey, which has led to a grading system: 0-5 means unique Manuka factors are not present; 6-9 means low levels; 10-15 are useful levels; and 16 and up are high levels.
- Flavor: This Manuka honey has the glimmering, gold-speckled honey I've come to anticipate from Manuka honey. I was also expecting a mouthful of medicine-like flavor. Instead, this was more like brown sugar or burnt sugar with that special bitter flavor that makes Manuka honey what it is. Some have described it as pepper or ginger. Perhaps.

This honey is light in flavor with a nice floral bouquet and a definite confectionery flavor about it. I think of fondant. Although labeled as mountain flower honey, I think the bees must have visited a lot of clover.

- Price: Unknown. My dad brought me this sample from his recent trip to Iceland. To show my gratitude, I am including it in my blog with a short review of its taste. Don't expect to find more of these types of entries -- although sampling little packets of honey would be cheaper.
- Flavor: I anticipated that this honey would be clover. I don't think so. It has a strong floral, perfume-like flavor. For lack of an obvious floral origin, I will file this under wildflower.

- Flavor: I know the point of this blog is to cover monofloral honey (I sometimes wonder if there really is such a thing since the beekeeper can't control where his bees go), but I've been given several jars of honey lately and thought I would include them. This honey is called Summer Flowers, but it tastes a lot like Summer Clover, so I have labeled it as clover honey. In addition to being reminiscent of clover, it has a fruity taste with a tangy finish.

- Flavor: I've had Manuka honey before and this batch doesn't look like the glimmering gold-speckled honey I've had before. It is a dark, reddish brown. I think one of the reasons Manuka honey is marketed with medicinal claims (this jar says to use a half tablespoon daily) is that it tastes like a medicine. This one is recognizable as a Manuka honey, but it surprised me with its strong molasses and licorice flavor notes.

- Flavor: Had I been blindfolded I would have guessed that this was clover honey. It does not appear to me to have any of the flavor notes of the mint family, of which sage is a member. There is a certain "chewiness" to this honey. It has a nice buttery, butterscotch-like flavor.
